Well, as road trips usually go, we’ve had some bumps in the road.  Quite literally. Today started peacefully in a Walmart parking lot.  Eating breakfast for the first time at our little RV table.   Then we packed up and hit the road.  By now I think I’ve got the hang of what needs to be secured so it doesn’t fly across the RV when Colin turns.  We had a few close calls yesterday.  Rookies. Today’s the day!  Hitting the road in the RV with my crazy family!  We got a late start because we had to take care of some things at the DMV before we left, so our target destination was not reached.  The great thing about not having plans is that stuff like that doesn’t matter at all. It’s here!  It’s here! We are all so excited!     Except Payton, who is sometimes too cool to be excited about things.  Or maybe he just won’t smile for the camera when I ask him to.   After we checked it out and did some last minute cleaning I started packing our things into it.  Which took approximately F-O-R-E-V-E-R.  A bit longer than I planned for. Eating Healthy On The Road

This week I’ve been trying to prep some food for our RV trip.  Just because we’re on the road doesn’t mean we have to eat unhealthy “road food”.  I’ve done some work in advance to make breakfast and snacks easier. 5.  Berries Berries in the northwest are like little drops of heaven.  They are sweet and juicy and plentiful.  I get some every weekend at the farmer’s market.  The ones in the grocery store sent from California don’t even compare.  Eewww. Fresh Hood strawberries abound right now.  Then it will be raspberries and blueberries and marrionberries.  And they will all be turned into jam and berry crisp and pie filling and toppings for my cereal.  And more jam.
