By The Numbers

Day one of the experiment went off without a hitch!  I had a very successful and encouraging doctor appointment and have received most of my test results.  I’m still waiting for two of my vitamin tests to come back, but I think I’m done waiting.  I’ll add those numbers when I get them.  Here’s where my health stands today.

The only number that is not within the normal range is my weight.  Apparently I’m a pretty healthy person.  Now do you see why my weight is so frustrating to me?  I strive to be so healthy, and yet my weight just won’t give!!!  Grrrr!!  That’s my frustrated growl.

I’m trying to start this whole experiment as painlessly as possible.  So I’ve planned to make some of our favorite dishes and just leave out the meat.  Last night we has spaghetti, garlic bread and salad.  And for the first time Shiloh actually tried it…and LOVED it!  He said, “Wow!  I LIKE it!!  I just tried it and I LIKE it!  Just like Sam I Am’s grandpa!” That’s right, he thinks the guy in Green Eggs and Ham is Sam’s grandpa.  That boy makes me laugh every day!

Tonight we’re going to have meatless taco soup.  The great thing about taco soup is that you can just throw it all together, simmer it for 30 minutes and you’re good to go!  Especially when you don’t have to cook any meat.  Want to try it too?  Well, you’re in luck!

Heidi’s Meatless Taco Soup

1/2 meduim onion, diced

3 cloves garlic, minced

1 can petite diced tomatoes

1 can tomato sauce

3 cups water

1 can corn (drained and rinsed)

1 can black beans (drained and rinsed)

1 can red kidney beans (drained and rinsed)

1 can pinto beans (drained and rinsed)

1 can garbanzo beans (drained and rinsed)

1 packet taco seasoning

Saute onion and garlic in a large stock pot until onion is translucent.  Add everything else.  Stir.  Bring to a boil.  Reduce heat and simmer for 30 minutes.

We eat this topped with shredded cheese and scooped with tortilla chips.  Who needs spoons!?

  1. Wow, Heidi – this is impressive. Congrats on your great blood results! Looking forward to see how your experiment plays out in how you feel overall, since your numbers are already so great. I know there are some changes I need to make for sure. Will u get me the name of your doctor? She sounds great.
